After harvesting, cherries are pulped and wet fermented for 24 hours to remove mucilage. They are then graded by density via canals, soaked for 20 hours to improve clarity and shelf life, and hand-sorted wet to eliminate defects early. Drying is done slowly on raised beds with continuous attention.
This meticulous washed process results in a vibrant, refined cup—bright acidity, delicate florals, and a clean, sweet finish. A versatile and dependable coffee.
